Stuffed peppers baked with cheese and vegetables - a recipe you'll love

4 large peppers (red, yellow or green)
1 zucchini
1 carrot
1 onion
2 tomatoes
150 g cooked rice or bulgur
150 g grated cheese (Eidam, Gouda or mozzarella)
2 teaspoons olive oil
2 garlic cloves
salt, pepper, oregano, basil to taste

Preparing the peppers:
Wash the peppers, cut off the tops and healthy seeds.

Heat the oil in a pan, fry the onion and garlic.
Add the grated carrots, zucchini and chopped tomatoes.
Season with salt, pepper and herbs.
Stir in the cooked rice or bulgur and half of the cheese.
