This starts with 500g lean ground beef, sautéed with onion and garlic until fragrant and golden brown. Chopped yellow bell pepper adds sweetness and texture, while three tablespoons of concentrated tomato paste deepens the flavour and colour. Spices – a teaspoon each of dried thyme and paprika – give the meat a warmth and earthiness, complemented by a pinch of oregano, salt and freshly ground black pepper. Once the meat mixture is simmering, it is placed in an oven-safe dish and topped with creamy mashed potatoes made from boiled potatoes whipped with butter and milk until silky smooth. Two hundred grams of grated mozzarella and a final pinch of 100g grated Parmesan cheese melt on top of the potatoes in the oven, creating a shiny crust. A pinch of it brightens the dish as it bubbles and turns golden brown. This one-course meal combines the comfort of a rustic shepherd's pie with the indulgence of cheesy potatoes, making it ideal for family dinners or social gatherings.

A complete list of ingredients
Step-by-step cooking instructions
• 500g minced meat (beef, lamb or pork)
• 1 medium onion, finely chopped
• 2 cloves garlic, finely chopped
• 1 yellow pepper, diced
• 3 tbsp tomato paste
• 1 tsp dried thyme
• 1 tsp paprika
• 1 tsp dried oregano
• Salt and freshly ground black pepper to taste
• for frying
• 30g butter for mashed potatoes
• 600g potatoes, peeled and diced
• 100ml milk
• 200g grated mozzarella cheese
• 100g grated
• chopped for garnish
1. Preheat oven to 200°C (390°F). Lightly grease a 20 x 30cm ovenproof dish.
2. Heat 1 tbsp in a large frying pan over medium heat. Add the chopped onion and fry for 3 minutes until translucent. Stir in the chopped garlic and fry for 1 minute until fragrant.
3. Increase heat to medium and add the minced meat. Break up the minced meat with a spatula and fry until browned, about 5-7 minutes. Drain off excess fat if necessary.
4. Add the chopped yellow pepper to the frying pan and fry for 2 minutes until slightly softened. Stir in the tomato paste, thyme, paprika, oregano, salt and pepper. Mix well and fry for a further 2 minutes to blend the flavours. Taste and season.
5. Pour the meat mixture into the prepared baking dish and spread it out in an even layer.
6. Meanwhile, place the potatoes in a large saucepan and cover with cold water. Add a pinch of salt and bring to the boil. Reduce the heat and simmer for 15 minutes, or until the potatoes are tender when pierced with a fork. Drain well. 7. Return the potatoes to the pan over a low heat for 1 minute to evaporate any remaining liquid. Remove the pan from the heat, add the butter and milk and mash until smooth and creamy. Season with salt and pepper.
8. Spread the mashed potatoes evenly over the meat layer with a spatula to form soft peaks for a nice texture.
9. Sprinkle the grated mozzarella evenly over the potatoes, followed by the grated Parmesan cheese.
10. Bake for 20 minutes, or until the cheese is melted and golden brown. For extra browning, switch to broiler for the last 2 minutes, keeping a close eye on it to prevent burning.
11. Remove from oven and let rest for 5 minutes. Garnish with chopped parsley before serving.
