Mix the wet ingredients in one bowl: eggs, applesauce, honey/maple syrup and vanilla.
Mix the dry ingredients in another bowl: almond flour, baking powder, cinnamon, nutmeg and salt.
Add the dry mixture to the wet mixture and stir well.
Fold in the grated carrots and chopped nuts.
Pour the batter into the pan and smooth the top.
Bake for 30–40 minutes or until a toothpick comes out clean. Let cool before cutting into slices.
🍯 Optional topping
Warm some honey with chopped nuts and drizzle over the cake for a glossy finish.

You can add raisins for extra natural sweetness. Store in the refrigerator for up to 4 days. Tastes even better the next day!
